DSCN0870One of my favorite things to cook when I cook for myself is fish. It can be simple or complex, made with few ingredients, takes very little time to prepare and when you are eating it, you truly feel like you are treating yourself to something gourmet.

Here I present you with one of my all time favorites. It is simple, utilizing only 5 ingredients (plus salt and pepper). If you don’t have white wine vinegar, I recommend picking up a bottle. It is inexpensive and always good to have on hand for homemade salad dressings and adds zing to fresh fruit salsas. You can use red wine vinegar in its place, but it will change the color of your sauce. If you do not like grapefruit try this recipe with juicy oranges. A blood orange would make for some beautiful color and an interesting flavor.

Halibut with Warm Grapefruit Butter Sauce

1 small pink grapefruit

1 piece halibut (whatever size you like)

1 Tbs shallot, minced

2 ½ Tbs unsalted butter, divided

2 tsp white wine vinegar

Salt and Pepper

  • Finely grate 1 tsp zest from the grapefruit. Cut the grapefruit in half. Squeeze juice from one half and set aside. Cut off and discard skin and white membrane from other half and chop the meat of the grapefruit into small ½” segments.
  • Boil ¼ c juice, zest, shallot, and vinegar in a small sauce or sauté pan until reduced to about 1 Tbs. If you reduce it too much you can add more juice. Remove from heat and set aside.
  • Season halibut with salt and pepper. Add 1 Tbs butter to a heated sauté pan. Allow butter to bubble for a moment, then add halibut and sauté on high heat until golden brown and cooked through. The halibut should be firm to the touch and opaque, but still flakey. This can take anywhere from 2-4 minutes per side depending on the thickness of the fish. Beware of overcooking.
  • Place halibut on a plate and return sauce to low heat. Add 1 ½ Tbs butter and stir until melted. Add 1/3 c chopped grapefruit segments and season with salt and pepper. (If you used salted butter, skip the salt in this step).
  • Pour sauce over halibut and serve.
